Really Tiny Baby Steps

Saturday morning breakfast with the girls. My little daughters (ages 7, 5 and 2) helped me make fruit salad and we dipped cut up biscuits into melted coconut oil and cinnamon sugar. Then we baked them at 400 degrees for about 12 minutes. It was delicious. Usually I make biscuits from scratch, but these were oh-so-unhealthy Texas style refrigerator biscuits I got for .79 a tube.

Dinner Thursday night was beer battered and fried tilapia, sauteed spinach and rice with some veggies I sauteed also (onions, carrots, mushrooms). It was, of course, delicious.

Lunch one day last week. Leftover baked chicken with barbecue sauce and leftover baked russet potato fries. Somewhat bland but filling.

I paired that lunch with a spinach salad. I used the fruit my girls didn't eat for breakfast (mango, red grapes, and clementines) and an Asian dressing. Very, very good.

Sunday morning breakfast (today) was a bowl of old-fashioned oatmeal made with mostly water and a splash of 1% milk, about a teaspoon of coconut oil, some flax seed, cinnamon and a little brown sugar. I know I should measure but I didn't.

Haven't exercised at all but my cold is gone and I do feel a lot better. Starting tomorrow (I know, I'm such a Scarlett O'Hara) it's back on the exercise wagon. I'd like to also incorporate some of the ideas I learned when I was doing The 17 Day Diet such as drinking iced green tea with meals and more yogurt.

Day 2

This is what I made the girls for breakfast. Used coconut oil instead of butter. Man, it was delicious! Drank water and am just now having some coffee. Oh and I've lost count of the pieces I've eaten. *sigh*

Feeling a little better today. Planning to walk later. Tomorrow I'm meeting a friend at the gym.

I was joking when I set up this blog. We got a new to us leather sofa from Craigslist and we love it. However, my love of sitting on the couch has made my own ass, how shall I say, not so fine. So starting today I'm going to record what I eat and my goals.

Baby steps, right? First goal is to make it to February 16 and weigh five percent less than I do now. Currently, thanks to lots of yummy food over Christmas, I am at 192.8 pounds. I'm only 5'2". Yeah.

So, I plan to drink more water, eat more fruits and vegetables and get more exercise. That's it. Let's keep it simple.

Before Pictures (taken today)

Breakfast

Ha! I had some coffee w/ cream and agave nectar and two Ding Dongs. That was before I put on my old yoga pants and saw my ass in the full length mirror.

Lunch

I've been sick with a cold or sinus infection. Planning to get some exercise by walking later today when my husband gets home and then tomorrow going to the gym.

UPDATE:

Later I had some mixed cereal w/ a 1/2 cup of 1% milk. This is mostly Kashi but some leftover Lucky Charms and Cinnamon Toast crunch got mixed in. I measured 2/3 of a cup.

Sharp cheddar cheese, saltines and red pepper.

For dinner I ate leftover baked spaghetti and drank some carbonated juice. Also had a few pieces of dark chocolate.
