Really Tiny Baby Steps


Saturday morning breakfast with the girls. My little daughters (ages 7, 5 and 2) helped me make fruit salad and we dipped cut up biscuits into melted coconut oil and cinnamon sugar. Then we baked them at 400 degrees for about 12 minutes. It was delicious. Usually I make biscuits from scratch, but these were oh-so-unhealthy Texas style refrigerator biscuits I got for .79 a tube. 



Dinner Thursday night was beer battered and fried tilapia, sauteed spinach and rice with some veggies I sauteed also (onions, carrots, mushrooms). It was, of course, delicious.



Lunch one day last week. Leftover baked chicken with barbecue sauce and leftover baked russet potato fries. Somewhat bland but filling. 


I paired that lunch with a spinach salad. I used the fruit my girls didn't eat for breakfast (mango, red grapes, and clementines) and an Asian dressing. Very, very good.


Sunday morning breakfast (today) was a bowl of old-fashioned oatmeal made with mostly water and a splash of 1% milk, about a teaspoon of coconut oil, some flax seed, cinnamon and a little brown sugar. I know I should measure but I didn't. 

Haven't exercised at all but my cold is gone and I do feel a lot better. Starting tomorrow (I know, I'm such a Scarlett O'Hara) it's back on the exercise wagon. I'd like to also incorporate some of the ideas I learned when I was doing The 17 Day Diet such as drinking iced green tea with meals and more yogurt.
